Every now and then I stumble upon a paleo recipe that becomes my new obsession and this time it’s banana muffin bites. I’ve been making them every single day for about two weeks straight now, adding and removing ingredients here and there.

Making them is super easy as well. To start, you’ll want to preheat your oven to 350°F and line 18 cavities of a mini muffin pan with paper or silicone cups before setting to the side.

You can then get your food processor out and add in the almond flour, coconut flour, baking powder, banana, egg, creamy almond butter (make sure it’s all natural!), melted coconut oil, pure vanilla extract, and just a pinch of salt. Process until it forms a smooth mixture and then you can gradually fold in your paleo friendly dark chocolate chips.

Scoop your batter into your prepared muffin cups and top each of them with extra dark chocolate chips if you would like.

Bake the muffins at 350°F for approximately 15 minutes. Once they’re done baking, just be sure to allow them to cool off completely before serving.

Can I Use All Coconut Flour or All Almond Flour Instead of a Combination of Both?

No, it’s not recommended to either use all almond flour or all coconut flour when making these banana muffin bites.

The main reason being that the texture of your dough batter will be affected. Mixing both almond flour and coconut flour together with baking powder is what ends up giving your mixture the proper consistency to make the best paleo banana muffin bites.

Is Baking Powder Considered Paleo?

Most people are usually surprised to learn that most commercially available brands of baking powder are in fact not paleo friendly.

Many brands actually have hidden ingredients like wheat or corn starch that keeps them from being 100% paleo.
